Lunchbox (Wednesday)

This bread is baked in a Pullman Pan.  European beadmakers began using the pans in the early 18th century to minimize crust. George Pullman chose the loaf for use on his railcars for efficiency reasons because of their size and stackability.  The pan has a snug fitting lid that houses the bread as it raises and bakes.  It creates a loaf that is an oblong square, mimicking the pan it is baked in.  This buttery, slightly sweetened, yeasted bread is an excellent choice for every-day use and makes tasty sandwiches & toast.  Kids love it!
